Let’s Celebrate The Coming Weekend

How’s your week going? Is it Friday yet? Have you finished your week strong?  I am glad it is Friday (grateful, one might say)  and I thought a summer bread would be a great way to wrap up this work week.  I wanted to share with you a recipe I came across a few years ago that can take your day from meh to yay!

LEMON BLUEBERRY BREAD

Yes, you read that right! I stumbled upon this combo when I had bananas needing to be turned into bread and I didn’t have my normal yellow or spice cake mix in the pantry. Yes, the cake mixes make the best banana bread. Why? I just find they don’t fall apart on me as much as homemade ones do. Maybe I just need to find a better recipe. However, when one needs a quick recipe – here is my hack.

This truly is amazing. It won’t last so let me give you the recipe quickly so you can get one made.

Ingredients:

1 box (any brand) lemon cake mix (if you’re like my daughters and like to make everything “clean”; I found this recipe for lemon cake)
1 stick of butter (melted)
3 ripe bananas
2 eggs
handful of blueberries

Directions:

Preheat oven to 350F and lightly spray a loaf pan.
Mash the bananas in a medium bowl and pour the melted butter over them.
Mix in the cake mix and then the two eggs (be careful that the butter is cooled enough not to cook the eggs).
Spread into a loaf pan and then scatter as many blueberries as you want over the top of the batter.
Cook for about 45 minutes until a fork or a toothpick inserted comes out clean.
The blueberries won’t sink much but when it has cooled enough you can put it upside down on a platter and it works out well.
